Healthier and more delicious version of coleslaw salad

Coleslaw does not have to be an unhealthy salad if you replace mayo with healthy olive oil and add a few additional, healthy ingredients. You will end up with not only healthier but also more delicious version that can be served both as a snack or side dish.

 

Ingredients

 

(1-2 servings)

150 g  fnely shredded purple or white cabbage, or both (I go the easy way and buy shredded cabbage)

2 celery stalks, cut into small pieces (I do it with scissors because it’s faster)

half a bunch of chopped parsley

a bunch of chives – chopped

approx. 5 tablespoons of extra virgin olive oil

optionally – lemon juice (I do not use it, defnitely prefer my healthy coleslaw without lemon)

salt to taste

 

Recipe

 

1. Mix well all ingredients

2. The salad is best served right after preparation. You can put it in the fridge, but it won’t be as delicious.
