Chickpea flour pizza with fresh tomatoes

Glutenfree, healthy and very easy chickpea flour pizza is quite an interesting version of classical Italian pizza. Topping from autumnal tomatoes that are full of flavour make this pizza irresistible.

 

Ingredients:

250 gr chickpea flour

200ml water

1 tablespoon olive oil

salt and spices (e.g. oregano)

3 fresh tomatoes, sliced

1 onion, sliced

125g mozzarella, sliced

bunch of fresh rucola

 

Recipe:

1. In a bowl mix water, chickpea flour, olive oil, salt and spices. Batter should have consistence of thick pancake batter

2. Spread batter on baking sheet lined with parchment paper

3. Bake in the oven at 200°C for approximately 20-30 minutes

4. Remove from the oven and spread tomatoes, onion and mozzarella on top

5. Put pizza again in the oven and bake for approximately 10 – 20 minutes

6. Remove from the oven, decorate with fresh rucola and serve
