Buckwheat groats and strawberry breakfast smoothie

I’m more than sure that I’m not the only one person that finds My New Roots blog truly fascinating.  It’s not only inspiring but also innovative, so if you haven’t heard about it you should definitely visit it. Everything that you find on My New Roots is simple, delicious, beautiful and last but not least healthy. These words can also describe vegan and gluten free breakfast smoothie that I prepared from one of Sarah’s recipe for raspberry porridge. I called it smoorridge from a combination of “smoothie” and “porridge” words. It’s the example of the perfect breakfast that is not only simple and delicious but has all the ingredients to help you easily kickstart even the most difficult and demanding day.

 

Ingredients

(2-3 servings)

3/4 cups of buckwheat groats
1 tablespoon of apple cider vinegar or lemin juice
1 tablespoon of vanilla extract
2 – 3 cups of strawberries (fresh or frozen)
125 ml of vegan milk or water
If you absolutely need, add a little bit of sweetener of your choice
juice from half of lemon

Recipe

1. Soak buckwheat groats in water with apple cider vinegar or lemon juice overnight
2. Drain soaking water and rinse very well with fresh water
3. In a blender blend milk/water, strawberries, sweetener if you are using one as well as vanilla extract
4. Add buckwehat groats and blend until smooth.
5. Season with lemon juice, decorate with strawberries and serve
