Radish leaves pesto

I want to convince you that you don’t really have to discard radish leaves, cause they can be used to prepare spicy and very original pesto. It is so good that I’m preparing it quite often and either use it as a pesto for freshly cooked pasta (spaghetti or tagliatelle are the best choices) or as a spread on a sandwich.

Ingredients

leaves from one bunch of radish
around 50 ml extra virgin olive oil
100 g sunflower seeds
salt and freshly ground pepper – lots of salt and pepper actually
optionally 1 clove of garlic and / or half of chilli – I definitely recommend not skipping these 🙂

 

Recipe

1. Wash radish leaves well and dry
2. Blend radish leaves together with olive oil and sunflower seeds. You can also add garlic and / or chilli
3. Season with salt and freshly ground pepper
