Onion sandwich spread

I have always been a huge fan of stewed onions with egg or liver, consumed in quite large quantities with classic and fresh sourdough bread. However, in my opinion, this onion bread paste is much better. Yeast is added to the spread instead of eggs or liver. While maintaining the right proportions, you do not feel their taste, but thanks to them the onion paste is incredibly creamy and also very healthy, because it has a lot of vitamins. It is delicious when served both hot and chilled.


Ingredients

6 onions

100 g yeast (you can use more if like)

salt and pepper to taste

frying oil

Recipe

1. Thinly slice onions. You can also chope them finely if you want to.
2. Put onions in a pan together with oil and simmer it with just a pinch of salt
3. Simmer gently until tender. Stir often so as not to burn and brown the onion too much
4. Once the onion is very soft stir in yeasts and mix very well and allow the paste to thicken.
5. Simmer it for a few more moments to make sure the yeast has been deactivated thanks to the heat treatment. Feel free to experiment with the amount of yeast. You can add less, mix it, check if it’s okay, or maybe you want to add more.
6. Season with salt and pepper
