Tahini

Once, when I was shopping for tahini, one guy told me that buying tahini is weird, since it could be easily made at home. I could’t believe him, but now it appears that he was absolutey, 100% right. Tahini paste, the main and significantly important hummus ingredient, can be prepared at home easily and almost effortlessly. It’s not only cheaper but also better and definitely not that bitter as the store-bought version, so beside hummus it can be used in delicious and healthy desserts.

Ingredients

200g hulled sesame seeds

 

Recipe

1. Turn on the oven and set the temperature for 180ºC
2. Place sesame seeds on a baking tray lined with baking paper, and place in the oven
3. Roast sesame seeds for around 10 – 15 minutes. Take care not to burn sesame seeds not even make them golden brown, since with colour comes the bitterness. You want exactly the same colour after roasting than before.
4. When done with roasting remove from the oven and allow to cool completely
5. Place sesame seeds in a food processor and grind until reaching spate like consistency. Be patient, cause it may take even 10-12 minutes.
6. Store tahini in a refrigerator up to three weeks
