Sweet potato soup with peanut butter

This soup is not only healthy and nutritious but it also includes my beloved peanut butter. It’s  superdelicious, smooth and surprisingly quite easy to prepare. It is perfect autumnal or wintry  soup.

 

Ingredients

 

3-4 servings

1 big onio, thinly sliced
1 red ball pepper, cubed, seeds removed
half of fresh chilli
ok 125 tomato sauce
1 carrot, medium sized, sliced
1 large sweet potatoe (around 300g), cubed
3 cloves of garlic
3 tablespoons of peanut butter (if you want to use store-bought, search for salt, sugar and palm oil free version or use homemade version. I used homemade, prepared according to this recipe:click) – you can add a bit more if you like
salt
oil for frying
around 1L of boiling water

 

Recipe

 

1. Saute onion with oil
2. Just before the end of sauteing add chopped garlic
3. Add tomato sauce and boiling water. Add also chilli, carrot and sweet potato
4. Simmer for around 5-10 minutes
5. Add ball pepper and simmer for 15 – 20 minutes or until all vegetables are soft
6. Blend until smooth
7. Add peanut butter and mix well. After adding peanut butter do not bring to boil again, but if you think that the soup is too thick, you can add more water
8. Season with salt and serve
